When you don’t have time to cook an elaborate meal at the end of a long work day, this simple but filling Chicken and Rice Salad is easy to throw together. A store bought cooked chicken is stripped of its meat and roughly shredded, then combined with warm rice, salad vegetables and a classic tangy dressing. Perfect for a quick weeknight meal – give it a go today!
Ingredients:
1 Store Bought Cooked Roast Chicken (meat removed and shredded)
2 Cups of Brown Rice (cooked as per packet directions, or use microwavable rice)
1 Small Packet of Baby Spinach Leaves (about 60g)
1 Punnet of Cherry Tomatoes or similar (about 250g)
2 Spring Onions (thinly sliced)
4 Tablespoons of Olive Oil
2 Tablespoons of Lemon Juice
2 Teaspoons of Minced Garlic (about 2 cloves)
Salt and Pepper
Preparation Time: About 15 minutes
