Ingredients:
CAKE:
125g of Unsalted Butter (at room temperature)
2 Eggs
3/4 Cup of Caster Sugar (aka Super Fine White Sugar)
1 Teaspoon of Vanilla Extract
3/4 Cup of Plain All Purpose Flour
3/4 Cup of Self-Raising Flour
1 Teaspoon of Bicarbonate of Soda (aka Baking Soda)
3 Large Ripe Bananas (mashed)
1/2 Cup of Chopped Nuts (Walnuts or Pecans) + Extra for decorating
(I used chopped Banana Chips for a nut-free option)
FROSTING:
125g of Philadelphia Style Cream Cheese (at room temperature)
60g of Unsalted Butter (at room temperature)
1 Teaspoon of Fresh Finely Grated Lemon Zest
3 Cups of Icing Sugar (aka Powdered Sugar or Confectioners Sugar)
Preparation Time: About 30 minutes
Cooking Time: About 50 minutes
