Here is my best ever recipe for a rich, creamy and delicious Slow Cooker Tomato Soup – and it’s super easy to make. Gorgeous vine ripened tomatoes are combined with onion, garlic and stock, then simmered slowly in the slow cooker. The result is a rich and flavourful soup that the whole family will love. Don’t forget to add a dollop of cream to make this soup extra rich and creamy – give it a go!
INGREDIENTS:
1kg of Tomatoes (I used vine ripened tomatoes, but any ripe tomatoes will do!)
1 Small Brown or Yellow Onion (chopped)
1 Carrot (peeled and finely chopped)
2 Cloves of Garlic (finely chopped or minced – or use the stuff out of a jar!)
2 Cups (about 500ml) of Chicken, Vegetable or Beef Stock
2 Tablespoons of Tomato Paste
1 Teaspoon of White Sugar
1 Tablespoon of Worcestershire Sauce (optional)
1 Tablespoon of Olive Oil
Salt and Pepper
1 Tablespoon of Double Cream (optional)
Preparation Time: About 5 minutes
Cooking Time: About 4 hours on HIGH setting or 8 hours on LOW setting
SERVES 4 to 6 depending on portion size
