This easy hand pie recipe is the ultimate in relaxed comfort food baking. Cooked chicken is combined with grated carrot and zucchini, sautéed onions, cream cheese and seasonings. Enveloped in puff pastry and baked until golden, these simple to make hand pies are perfect for lunch, dinner, snacks, picnics and parties. Think Chicken Pot Pies but easier and more portable – give it a go!
INGREDIENTS:
4 Sheets of Frozen Ready Rolled Puff Pastry (thawed)
500g of Cooked Chicken (chopped / shredded)
1 Carrot (grated)
1 Zucchini (grated)
1 Small Brown or Yellow Onion (finely chopped)
1/2 Cup of Frozen Corn (or Peas)
125g of Spreadable Cream Cheese (or 1/2 Cup of Cream)
Olive Oil (for frying onion)
Salt and Pepper
1 Teaspoon of Mixed Dried Herbs
Preparation Time: About 15 minutes
Baking Time: About 25 minutes
