After a friend introduced me to it a few years ago, this Finnish style Blueberry Pie has become my go-to baked dessert for when I want something warm and comforting, but quick and easy to prepare. Sort of a cross between a pie and a cake, this dish takes just minutes to prepare! Flour, oats, sugar, butter, sour cream and an egg are combined then topped with blueberries and more sugar. Baked until golden, this glorious dessert is best served warm out of the oven with vanilla ice cream, whipped cream or custard – give it a go!
INGREDIENTS:
BASE:
125g of Butter (melted) + a little extra for greasing
1/2 Cup of White Sugar
1 Egg
1 1/2 Cups of Plain All Purpose Flour
3 Tablespoons of Rolled Oats
1 Teaspoon of Baking Powder
Pinch of Salt
150g of Sour Cream of Natural Yoghurt
TOPPING:
250g of Fresh or Frozen Blueberries
1 Tablespoon of Corn Flour (aka Corn Starch)
2 Tablespoons of White Sugar
Preparation Time: About 5 minutes
Baking Time: About 25 minutes (or until golden)
